The only problem with eating Thanksgiving dinner 400 miles away...

The only problem with eating Thanksgiving dinner 400 miles away is that the leftovers are 400 miles away, too.

Turkey lunchmeat ain't cutting it.

That is exactly why we are cooking our own turkey and dressing today. After being fed so lavishly at our friends' house Thanksgiving Day, the only thing I brought home was cake and man nor eagle cannot live on cake alone! Real turkey sandwiches later tonight or at least by tomorrow. I have to have turkey and dressing and cranberry sauce first.

Even though we usually do something on Thanksgiving other than cooking ourselves, we always buy a turkey to cook over the following weekend. The best part of the turkey to me is the turkey sandwiches.

The only problem with Thanksgiving with family is 120 miles away with a family that hoards every empty margine, whip topping and deli container around.....

leftovers out the whazoo....

I've had okra, greens, dressing, dumplings, cornbread, etc.... Thursday lunch fresh...
Thursday night at home...
Friday night at home...

thanks goodness, Saturday was eaten out with shopping

Sunday night at home...

still some remains...

I can't wait to make chicken spaghetti or turkey tetrazzini (sp?). Our friends had some Thanskgiving Day. This is my favorite way to use leftover turkey!

I'm about the throw something from Super Suppers into the oven.

I really am craving some green bean casserole.

I'm about to do my special green beans and they are better than the green bean casserole.

Drain a can of whole green beans and then fill the can back with water (with the beans still inside). Put in a pan with one chopped onion and some fresh minced garlic. Simmer for 30 minutes or so. Then melt a few teaspoons butter or margarine; add some chopped pecans; crumble one piece of bread fine and add to pecan mixture. Serve as a topping for the green beans.

My sister shared turkey, deviled eggs, and gravy - but somehow we got home without her homemade cranberry sauce. But, I made cornbread dressing, carrots and green beans to go with it last night! :)

I think I like the leftovers more than the original meal! :)

Maybe I should have seen this one a few days ago:

Twas the night of Thanksgiving, but I just couldn't sleep
I tried counting backwards, I tried counting sheep.
The leftovers beckoned...The dark meat and white
But I fought the temptation with all of my might
Tossing and turning with anticipation
The thought of a snack became infatuation.
So, I raced to the kitchen, flung open the door
and gazed at the fridge, full of goodies galore.
I gobbled up turkey and buttered potatoes,
pickles and carrots, beans and tomatoes.
I felt myself swelling so plump and so round,
"Til all of a sudden, I rose off the ground.
I crashed through the ceiling, floating into the sky
with a mouthful of pudding and a handful of pie.
But, I managed to yell as I soared past the trees....
Happy eating to all~ Pass the cranberries, please.
May your stuffing be tasty, may your turkey be plump.
May your potatoes 'n gravy have nary a lump.
May your yams be delicious, May your pies take the prize.
May your Thanksgiving dinner stay off of your thighs!!!!
